Natural Antibiotic Found in Feta Cheese

Feta cheese is now more than a delicious addition to a Mediterranean meal—it also has antibiotic properties. Panagiotis Chanos of the University of London, England, discovered that enterococci, bacteria in feta made from raw milk, not only give the cheese flavor, but also produce compounds called bacterions. These compounds can kill bacteria that cause food poisoning. Certain kinds of enterococci can produce as many as three different kinds of bacterions. The medical industry has long considered enterococci to be unfriendly bacteria, due to occasional outbreaks of antibiotic-resistant strains. United Press International, April 3, 2008
